40ml Inverroche Amber Gin
25ml Vanilla Syrup
5ml Absinthe
15ml Lemon Juice
20ml Bitter Aperitif
1 Egg White
Method
Add all ingredients into a cocktail shaker with ice and shake well. Fine strain into a stemmed vintage coupe glass with 1 ice brick and garnish with lemon zest and Baby Breath flowers.

2 Sprigs Fresh Thyme 15ml Lemon Juice
75ml Cranberry Juice
Honey Syrup
Add about 100ml of honey into a mixing glass, then add 50ml of boiling water. Stir the mixture for about 30 seconds or until the honey has begun to soften and not stick to the glass. Pour out of the mixing glass and into a bottle and use in the drink as guided.
Method
Add all ingredients into a cocktail shaker with ice and shake well. Strain over a clear ice brick in a stemmed Cognac glass. Apply thyme wreath garnish to the rim.
